Minger cheese

Minger

‘Pong & Pleasure’

Highland Fine Cheeses, Tain

Highland Fine Cheeses are run by the Stone family, who have been making cheese since the 1950’s Minger is a soft washed rind cheese with a pungent aroma that you’d expect from this type of cheese. The texture is soft and silky with a satisfying ooze when the cheese is cut, giving way to a strong, yet not aggressive flavour. Deliciously oozy, creamy paste, mildly nutty and lemony, hinting at flavours of the farmyard but becoming decadently pungent and runny when ripe. A Minger should ming – in a good way!

Style: Rind washed
Milk variety: Cow’s
Type: Pasteurised
Rennet: Vegetarian
Country of origin: Scotland

Strathdon Blue

‘Bold & Blue’

Highland Fine Cheeses, Tain

Strathdon Blue is a rich, creamy blue cheese made from pasteurised cow’s milk by the Stone family of Highland Fine Cheese Company Limited at Blarliath Farm, in Tain, Ross-shire. More complex than most Blues with bold cracks and streaks, this creamy, juicy cheese yields to the touch and fills the mouth with a delightfully fudgy texture, and well-balanced salty flavour. You need nothing more than a simple cracker or chunk of crusty loaf.

Style: Blue
Milk variety: Cow’s
Type: Pasteurised
Rennet: Vegetarian
Country of origin: Scotland

Yarg Cheese West coast deli

Yarg

‘Fresh & Lemony’

Lynher Dairy, Cornwall

Cornish Yarg is a nettle wrapped semi hard cheese made from grass rich Cornish milk. The leaves, which attract naturally occurring moulds, are brushed onto the cheese in concentric circles. As the cheese matures, the edible wrap imparts a delicate, mushroomy taste and develops its unique bloomy white appearance. Once matured, nettled Yarg is fresh, lemony and creamy under its beautiful rind, with an irresistible crumble in the core.

Style: Crumbly
Milk variety: Cow’s
Type: Pasteurised
Rennet: Vegetarian
Country of origin: England

Spenwood

‘Warm & Nutty’

Village Maid, Berkshire

Anne Wigmores ode to the wonderful cheeses of Sardinia.
Spenwood ewes milk cheese is the culmination of many years of trials and even today, changes are continually made in order to maintain the quality and flavour remembered from Sardinia. A hard-pressed cheese made from unpasteurised ewe’s milk with a vegetarian rennet. Spenwood is matured for nine months with a natural rind. Comparable to Manchego and Pecorino, it has a well-developed, nutty flavour but kept longer it becomes harder and more piquant and is a good substitute for Parmesan with pasta or risotto.

Style: Hard
Milk variety: Ewe’s
Type: Unpasteurised
Rennet: Vegetarian
Country of origin: England
