Cambozola

‘Subtle & Creamy’

Allgäu, Germany

Cambozola is a cow’s milk cheese that is a combination of a Camembert style French soft-ripened triple cream cheese and Italian Gorgonzola. It is made from the same blue penicillium roqueforti mold used to make Gorgonzola, Roquefort, and Stilton. Cream is added to the milk, giving Cambozola a rich consistency. The rind of the cheese is similar to the Camembert rind. Cambozola is considerably milder than Gorgonzola. It features a smooth, creamy texture with a subdued blue flavour.

Style: Soft Blue
Milk variety: Cow’s
Type: Pasteurised
Rennet: Vegetarian
Country of origin: Germany

Manchego semi cured D.O.P.

Manchego D.O.P.

‘Sweet & Aromatic’

La Mancha, Spain

Manchego takes its name from the dry plateau of La Mancha, south of Madrid. The hardy sheep who graze on the uncultivated areas of the plateau feed on shrubs, acorns, blackthorn and wild grasses which imbue their milk with thick aromatic character. The depth of flavour of the cheese depends on age, but all Manchego has an unmistakable richness reminiscent of brasil nuts and caramel and a slightly satly finish. The texture is dry yet creamy with a slightly oily surface.
Style: Hard
Milk variety: Ewes’s
Type: Unpasteurised
Rennet: Traditional
Country of origin: Spain

Isle of Mull Farmhouse

Isle of Mull Farmhouse Cheddar

‘Mature & Nutty’

Isle Of Mull, Scotland

A traditional farmhouse cheddar made on the Scottish West Coast. The cows are fed on spent whisky grains giving this cheddar a fruity, sharp and signature tangy flavour. The Reade family have been making this traditional farmhouse cheese at Sgriob-Ruadh for 40 years now. This is a hard cows milk cheese, cheddar like, with punchy flavour.
Style: Hard
Milk variety: Cow’s
Type: Unpasteurised
Rennet: Traditional
Country of origin: Scotland

Raclette de Savoie

Raclette de Savoie

‘Magical when Molten’

Rhone-Alpes, France

The name derives from the French verb racler, meaning to scrape, as this cheese was traditionally placed in front of an open fire and as it melted, scraped onto hot potatoes or bread. The supple, elastic texture melts superbly and has a sweet taste which becomes stronger when melted. Enjoy as is or slice and melt over potatoes, pickles and gherkins.
Style: Semi-Soft
Milk variety: Cow’s
Type: Unpasteurised
Rennet: Traditional
Country of origin: France
