Highland Heart Clava Brie

‘Ripe & Creamy’

Ardersier, Scotland

Clava is named after the prehistoric burial cairns of Balnuaran of Clava a few miles from the Clark’s family at Ardersier in the Scottish Highlands.
The smooth, pasteurised creamy, quite strong earthy brie is delicious. As it ripens, Clava becomes silky and at its best when the texture has become soft and luscious. To achieve excellent results, the Clarks hand ladle the very delicate curd into moulds and mature carefully in a temperature controlled store before being individually hand wrapped.
